Mandarin Oranges

History

In the United States, mandarins were cultivated as early as 1850, when examples were brought to the South from China. Flavor
Unlike some other members of the orange family, the mandarin orange is not routinely juiced. Canned products are often used in desserts, since the canning process often includes the use of a sweetening syrup which enhances the naturally sweet flavor of the mandarin. Once you are done with this, add spices to adjust to the liquid levels. Add more salt and pepper and taste. With this, your instant pizza sauce is ready to use. You can use right away or keep it in refrigerator for a couple of hours so that the taste develops further. The choice is yours!

Knowing the Perfect Hamburger


How to prepare the best burgers in the world seems to be something a lot of people are looking for. Do you know what the secret is for making the best hamburger that you'll ever taste in your life? It's really simple. You need to buy only the cheapest brand of hamburger that your grocery store or supermarket has for sale. The flavor is in the fat. Sure the more expensive ground beef may be healthier for you but it will never have the flavor that's in the cheaper beef.

One other mistake a lot of people make is that they over work their meat. You need to add the seasonings to your beef and then make sure they are well worked in and make out your patties. Their really is no reason to overwork the meat specially in these kinds of simple recipes. If you do you'll end up with tough burgers. When you have your seasonings added to the beef wet your hands well with cold water before you work your hands into the meat and roll out the patties of meat. Now you may ask what seasonings should I add to my meat. Well I'm going to tell you. For each pound of ground beef you will want to add.

1. One Teaspoon Seasoned Salt. 
2. One Teaspoon Worcestershire Sauce. 
3. Two Tablespoons Fine Diced Sweet Onion. 
4. One Tablespoon Minced Garlic. 
5. One Teaspoon Ground Black Pepper.

You will want to run your onion and your garlic through a food processor to get it very fine. You want it to be as fine as possible.

For each pound of beef you’re going to need add the above ingredients to each pound of beef. Once you taste your cooked burgers you'll wonder why you never did this before.

When you get ready to cook your burgers your grill needs to be hot. You need to prepare your grill ahead of time making sure that the grill is very clean and the grill grates where your going to lay your meat needs to be sprayed down with a good quality vegetable cooking spray.

Let me tell you another secret here. When you start to put each pattie of beef on the grill make an indention or small dimple in the center of each pattie. This will insure that each pattie cooks evenly and will help the burger to stay together.

Another thing I would like to share with you is to always butter and toast or grill your buns. And always buy the better quality buns to put your burgers on. Potato hamburger rolls are the best if they are available in your area.

Finally you should keep your lettuce, tomato, and onion cold until your ready to put your burgers together. By doing so you will always have a better tasting burger.

Caramel French Toast



Pain Perdu, which translates to “lost bread,” is the traditional French version of the American “French Toast.” It is an age-old technique for making use of leftover or stale bread by dipping them in a creamy mixture of milk and eggs and frying them in clarified butter. This recipe has a richer batter than the regular French toast or snack recipes similar. When cooked, the result is a custard-like texture in the interior and a crispy golden coating. The addition of caramel sauce adds mouthwatering sweetness that kids will love. Pain Perdu with Caramel-Benjamin is almost like dessert for breakfast. It is an easy recipe that is fun to do and as Chef Clement Bruno demonstrates here, kids can make this dish or assist you for a lovely way to start the morning.

Chef Bruno uses stale French bread for this recipe. You can also use day-old Italian bread or leftover brioche but not sourdough. Stale bread soaks up more of the milk-egg mixture without crumbling or falling apart, which fresh bread tend to do. Before frying the soaked bread, make sure that the butter in the skillet is sizzling hot to get a crispy outer crust.

This recipe makes use of the simplest of ingredients to make the batter: milk, eggs, sugar, and a pinch of salt. The thick slices of day-old bread are dipped on the batter generously covering both sides. Large amounts of butter are used to fry the dipped bread thoroughly. Other versions of Pain perdu add cinnamon or vanilla or both to the batter for more flavors. Others also like to top their pain perdu with fruits, honey, jam, Vegemite, apple sauce, whipped cream, maple syrup, powdered sugar, yogurt, marmalade, cheese, chocolate, or marmalade. Like pancakes or waffle syrup, it can also be served with bacon, beans, or sausages.

Ingredients
Waffle dough:
½ lb. flour
1.8 oz. sugar
1 ½ tablespoons baking soda
2.8 oz. butter
salt
4 egg yolks
4 egg whites
0.77 lbs. milk

Light cream:
1 cup cream
powdered sugar
vanilla

Apples:
5 apples, Calvados apple brandy
3.5 oz. butter
1.8 oz. sugar
water

Chocolate sorbet:
270 dark chocolate chips
3 1/2 oz. cocoa
2 pints water
1/2 lb. sugar
Chestnut syrup:
1/2 lb. water
½ lb. sugar
1 lb. chestnuts
vanilla

1. Make the batter by mixing the beaten eggs, milk, sugar and a pinch of salt and vanilla. Place in a shallow dish.

2. Slice the day old French bread into thick slices. Dip the slices on the batter, making sure that both sides are well covered. Don’t soak them in the batter too long and dip only two or three at a time, cooking them immediately after dipping. Place soaked slices on a clean dish.

3. Heat the saucepan and melt a generous amount of butter. Fry the bread slices until crispy and golden brown.

4. To make the caramel, heat sugar in a pan on very low heat. Keep stirring with a whisk until the sugar dissolves into a liquid.  As the liquid boils, stop stirring and swirl the pan to dissolve any remaining granules. When all crystals have melted, add the butter and whisk until the butter melts.  Turn the heat off and after about three seconds, add the cream in the pan and whisk vigorously until it foams and incorporates and becomes a smooth caramel. Allow to cool and store in a jar.

5. Arrange on a plate and pour caramel sauce over the bread. Serve and enjoy!
